The not so guilty treat. It is vegan, dairy and gluten free, no oil or butter and no added refined sugar.
Ingredients
6 ripe mashed bananas
2 tsp vanilla extract
1/4 cup coconut oil
2 tbsp ener-G egg replacer (w/ 4tbsp warm water) or 3tbsp flaxseed (w/ 4 tbsp warm water)
2 cups gluten free flour blend
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp baking powder
Optional: Add 1 cup of dark chocolate chips
1/2 cup of peanut or almond butter
1/2 cup of almond or pecan nuts
Instructions
. Preheat oven to 350degrees. Mix ener-G or flaxseed and water.
. Mix mashed bananas, vanilla and coconut oil.
. In a separate bowl, mix coconut flour, baking soda and powder, salt and cinnamon.
. Combine all the ingredients, mix till it is smooth.
. You can add the chocolate chips, peanut or almond butter.
. Spray or rub small amount of coconut oil on loaf pan.
. Lightly spread batter on pan.
. Bake for 1hr and let it cool before removing bread gently.
