Creamy, smooth and flavorful carrot soup is one of my favorite comfort food during this time of the year.
Ingredients
10 carrots (peeled)
3 celery stalks
4 garlic cloves
1 white onion
3tbsp olive oil
2 cups plant based milk of your choice
2 cups water
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp ginger powder
1/2 tsp salt
1/2 tsp pepper
Instruction
1. In a pot, heat oil and saute garlic, onion, and celery.
2. Pour plant based milk, carrots and all the spices.
3. Cook in medium heat for an hour, stirring occasionally.
4. Blend
5. Serve warm and enjoy.
